Sámi cuisine represents the indigenous culinary traditions of northern Scandinavia's Sámi people, centered on reindeer herding and Arctic foraging. Reindeer appears in every form — dried, smoked, sautéed, and as blood sausage — while Arctic berries, freshwater fish, and game round out the diet. Signature preparations include suovas (smoked reindeer), bidos (reindeer stew), and gáhkku (flatbread). This is one of Europe's few surviving indigenous food traditions, increasingly celebrated for its sustainability.
