Rakhine Recipes
Rakhine cuisine comes from Myanmar's western coastal state bordering the Bay of Bengal, where abundant seafood and proximity to Bangladesh and India create a distinctive culinary identity. The cuisine is considered the spiciest in Myanmar, with liberal use of dried and fresh chilies. Seafood dominates, prepared through drying, fermenting, and incorporating into intensely flavored curries and salads. Signature dishes include Rakhine mohnt-ti (spicy fish noodle soup with round rice noodles), ngapi kyaw (fried fish paste fritters), Rakhine-style dried fish curries, and htamin jin (fermented rice salad).
