Pamiri Recipes

Pamiri cuisine comes from the remote Pamir Mountains of eastern Tajikistan, one of the highest inhabited regions on earth, often called the "Roof of the World." The extreme altitude and harsh climate limit agriculture, making the cuisine heavily reliant on dried foods, yak and sheep products, and high-energy preparations. Signature foods include boj mulberry-based dishes, shirchoy butter tea with salt, and fatir-shurbo bread soup. The cuisine of the Ismaili Pamiri people preserves ancient Central Asian food traditions in relative isolation.
