Padang cuisine (Masakan Padang) originates from the Minangkabau highlands of West Sumatra and is widely regarded as one of Indonesia's richest and most flavorful culinary traditions. Characterized by bold use of chili, coconut milk, and complex spice pastes, Padang food is traditionally served in a distinctive style where dozens of small dishes are presented simultaneously at the table. Signature dishes include rendang (slow-cooked coconut beef), gulai (turmeric coconut curry), dendeng balado (chili-fried jerky), and sate Padang with its distinctive yellow sauce.
