Megrelian Recipes
Megrelian cuisine from western Georgia's Samegrelo region is the boldest and spiciest branch of Georgian cooking. It is distinguished by liberal use of adjika (hot chili paste) and an abundance of cheese, particularly sulguni. Megrelian khachapuri is topped with extra cheese, and elarji — a stretchy cornmeal and cheese dish — is uniquely Megrelian. The cuisine's intense flavors and dairy richness set it apart from the rest of Georgia.
