Malawian cuisine from the "Warm Heart of Africa" is centered on nsima (thick maize porridge), which is served at virtually every meal alongside ndiwo (relishes) of vegetables, beans, or meat. Lake Malawi, one of Africa's Great Lakes, provides chambo (a prized tilapia species) that is the country's most celebrated food — grilled, fried, or sun-dried. Kondowole (cassava flour porridge) is popular in the lakeshore and southern regions. The cuisine is nourishing and unpretentious, with peanut-based dishes, dried fish, and seasonal vegetables forming the backbone of daily cooking across the country.
