Māori Recipes

Māori cuisine represents the Indigenous food traditions of Aotearoa (New Zealand), centered on the hangi—an earth oven where meats and vegetables are slow-cooked over hot stones in a buried pit. Kumara (sweet potato), rewena paraoa (Māori sourdough bread), and kaimoana (seafood) including pāua (abalone), kina (sea urchin), and whitebait are treasured foods. Pikopiko (fern fronds) and horopito (bush pepper) are native plants used in cooking. The Māori concept of manaakitanga (hospitality) is expressed through generous communal feasting.
