Indigenous Recipes

Indigenous Liberian cuisine encompasses the culinary traditions of the Kpelle, Bassa, Grebo, Kru, and other native peoples who make up the majority of Liberia's population. The cooking revolves around rice accompanied by deeply flavored soups like palm butter, pepper soup, and palava sauce (made from leafy greens, palm oil, fish, and meat). Dumboy (pounded cassava), fufu, and GB (a thick cassava porridge) serve as starchy accompaniments. Bush meat, river fish, and wild plants from the tropical forests provide essential proteins and flavors, while country rice (indigenous Oryza glaberrima) remains culturally prized over imported varieties.
