Papa (maize porridge) served with moroho (cooked greens) and various meat stews is the everyday meal. The cold mountain climate necessitates hearty, warming foods, with thick soups, stewed beans, and slow-cooked meats providing sustenance. Motoho (fermented sorghum porridge) is a traditional breakfast, while joala (sorghum beer) is brewed for social gatherings. Lesotho's fresh mountain trout, introduced to highland streams, has become a national delicacy.
