Kyrgyz cuisine is shaped by the nomadic pastoral heritage of the Kyrgyz people and the dramatic mountain landscapes of the Tien Shan range. Like other Central Asian nomadic traditions, the cuisine centers on meat and dairy, with horse and sheep as primary livestock. Signature dishes include beshbarmak, kuurdak fried organ meat, and ashlyam-fu, a unique cold noodle dish with Dungan Chinese origins found only in Kyrgyzstan. Fermented mare's milk (kumis) and various dried dairy products remain central to the food culture, connecting modern Kyrgyz to their nomadic past.
