Highland Kenyan cuisine from the fertile central highlands and Rift Valley, home to the Kikuyu, Kalenjin, Meru, and other Bantu and Nilotic peoples, centers on the region's abundant agriculture. Irio (mashed peas, potatoes, and corn), mukimo, and githeri (corn and bean stew) are iconic highland dishes that showcase the region's staple crops. The cool climate supports dairy farming, making milk, mursik (fermented milk), and butter prominent in the diet.
