Coastal Kenyan cuisine from Mombasa, Lamu, and the Swahili coastline is the most richly spiced in East Africa, shaped by centuries of Indian Ocean trade with Arabia, India, Persia, and Southeast Asia. Biryani, pilau (spiced rice), and mahamri (cardamom-coconut doughnuts) reflect these cosmopolitan influences. Coconut milk is the essential cooking medium, enriching curries, stews, and the beloved wali wa nazi (coconut rice). Fresh seafood — crab, prawns, octopus, and reef fish — is prepared with masala spice blends, tamarind, and fresh lime in preparations found nowhere else in Kenya.
