Traditional Icelandic cuisine, known as þorramatur, preserves the survival techniques that sustained a isolated Viking colony for over a millennium. Hákarl (fermented shark), svið (singed sheep's head), slátur (blood pudding), and harðfiskur (dried fish) reflect an era when every part of every animal was precious. Hangikjöt smoked over dried sheep dung and skyr cultured from unpasteurized milk are ancient techniques still practiced today. The annual Þorrablót feast celebrates this austere but remarkable heritage.
