Mainland Honduran cuisine reflects the predominantly mestizo culinary traditions of Honduras's interior highlands and valleys. Baleadas, catrachitas (fried tortilla chips with beans and cheese), and anafres (bean and cheese fondue) are everyday favorites. Sopa de mondongo (tripe soup), nacatamales, and carne asada con chismol highlight the cuisine. Corn, beans, rice, pork, and chicken form the dietary foundation, prepared with simple seasonings and served with handmade tortillas.
