Gurage Recipes

Gurage cuisine from south-central Ethiopia is distinguished by its unique use of enset (false banana), a starchy plant virtually unknown outside the region. Kocho (fermented enset bread), bulla (enset starch porridge), and kitfo (finely minced raw or rare beef seasoned with mitmita and niter kibbeh) are the defining dishes. Kitfo is the Gurage's most famous contribution to Ethiopian cuisine, traditionally eaten raw and considered a celebratory delicacy. The Gurage are also known for their liberal use of spiced butter and their distinctively rich, intensely seasoned cooking style.
