Gazan Recipes

Gazan cuisine is the most distinctive branch of Palestinian cooking, influenced by its Mediterranean coastline, Egyptian proximity, and historic spice trade connections. Dill and hot chili peppers are used more liberally than elsewhere in Palestine. Sumagiyya, a sumac and chard stew, and zibdiyet gambari, a clay-pot shrimp dish, are uniquely Gazan. The cuisine features bold, fiery flavors and abundant seafood.
