Gaucho Brazilian cuisine originates from the cattle-herding culture of Rio Grande do Sul in southern Brazil, sharing traditions with neighboring Uruguay and Argentina. Churrasco—meats salt-crusted and slow-roasted on skewers over open flame—is the defining tradition, served rodízio-style in churrascarias. Chimarrão (mate tea) is a daily ritual. Side dishes include vinagrete salsa, farofa, and polenta. German and Italian immigrant influences bring cuca cakes, galeto al primo canto, and colonial-style sausages.
