Gambian cuisine from Africa's smallest mainland country is a concentrated expression of Senegambian culinary traditions shaped by Mandinka, Wolof, Fula, and Jola peoples along the Gambia River. Domoda (groundnut stew with rice), benachin (Gambian one-pot jollof rice), and supakanja (okra soup) are the pillars of the national diet. The Gambia River provides abundant fresh fish and oysters, while the surrounding groundnut farms supply the country's most important crop and culinary ingredient. British colonial influence left a tea-drinking culture that blends with traditional attaya (green tea) ceremonies.
