Amazonian Ecuadorian cuisine comes from the Oriente, where Indigenous Kichwa, Shuar, and Waorani communities maintain rainforest food traditions. Maito (fish wrapped in bijao leaves and grilled over coals) is the signature preparation. Chontacuro (palm grubs), yuca in many forms, and chicha (fermented yuca beverage) are fundamental. River fish, wild game, and fruits like naranjilla and arazá provide flavors unique to the jungle. This cuisine is gaining recognition through modern Ecuadorian chefs.
