Eastern Cuban cuisine from Santiago de Cuba and Oriente province carries the strongest African and French-Haitian influences on the island. Congrí oriental (red beans and rice, distinct from Havana's black bean moros) is the signature staple. Ajiaco, the original Cuban stew, is deeply rooted here. The region's proximity to Haiti and Jamaica brought stronger spicing, more coconut usage, and son music-infused cooking culture. Cacao and coffee from the Sierra Maestra mountains enrich the local food tradition.
