



Chifa Recipes
Chifa is the beloved Chinese-Peruvian fusion cuisine created by Cantonese immigrants who arrived in Peru in the mid-19th century. Chinese wok techniques and ingredients like soy sauce, ginger, and sesame oil merged with Peruvian ají peppers, lime, and local produce. Lomo saltado (technically a chifa dish), arroz chaufa (Peruvian fried rice), tallarin saltado (stir-fried noodles), and wonton soup are staples. Chifa restaurants are found on virtually every block in Lima.
