Chamorro cuisine is the Indigenous food tradition of Guam and the Mariana Islands, blending ancient Pacific Islander foodways with Spanish, Filipino, Japanese, and American influences accumulated over four centuries of colonization. Kelaguen (citrus-marinated meat or seafood with coconut and hot pepper), red rice (colored with achote), and chicken or shrimp tinaktak (cooked in coconut milk) are signature dishes. Fiestas are central to Chamorro culture, featuring elaborate spreads of barbecue, pancit, and local delicacies.
