Western Recipes

Western Cameroonian cuisine from the Grassfields highlands, home to the Bamiléké, Bamoun, and other peoples, is one of Central Africa's most elaborate culinary traditions. Achu soup (a yellow palm oil and cocoyam soup served with pounded cocoyam), nkui (a slimy vegetable soup thickened with a special limestone), and koki (steamed bean pudding wrapped in banana leaves) are iconic dishes. The region's cool highland climate supports diverse agriculture, while the Bamiléké's entrepreneurial spirit has spread their food culture across Cameroon. Palm wine tapping and elaborate feast preparations reflect the region's rich ceremonial traditions.
