Bruneian Recipes
Bruneian cuisine reflects the halal Malay cooking traditions of this small, oil-rich sultanate on the island of Borneo, enriched by Chinese, Indian, and indigenous Dayak influences. Rice is the centerpiece of every meal, complemented by rich coconut-based curries, grilled seafood, and aromatic sambals. The cuisine shares many commonalities with Malaysian and Indonesian Malay cooking but features distinctive local preparations and ingredients from Borneo's rainforests and coastal waters. Signature dishes include ambuyat (sago starch porridge eaten with flavorful dipping sauces), nasi katok (simple rice with fried chicken and sambal), and kelupis (glutinous rice in palm leaves).
