Eastern Bolivian cuisine from Santa Cruz, Beni, and the tropical lowlands contrasts sharply with highland cooking. Majadito (dried meat fried rice), locro cruceño (rice and chicken stew), and cuñapé (cheese bread made with yuca flour) are regional favorites. Beef ranching dominates the economy, producing excellent grilled meats. Yuca replaces potatoes as the primary starch, and tropical fruits like achachairú and guapurú add sweetness. The cuisine reflects Guaraní Indigenous and mestizo traditions.
