Garífuna Belizean cuisine comes from the Afro-Indigenous Garífuna people settled along Belize's southern coast. Hudut, the signature dish, pairs mashed green and ripe plantains with a rich coconut fish stew. Cassava is fundamental, processed into ereba (flatbread) and made into the fermented drink gifiti (infused with herbs and rum). Darasa (green banana tamales), bundiga (banana pudding), and fresh seafood cooked in coconut milk define this vibrant culinary tradition.
