Creole Belizean cuisine is the dominant culinary tradition in Belize, descended from enslaved Africans and British colonists. The signature dish is rice and beans stewed in coconut milk with stewed chicken, pork, or beef. Boil up, a one-pot meal of root vegetables, fish, and dumplings in coconut broth, is a Saturday tradition. Fry jacks, Johnny cakes, and conch fritters are everyday fare. Creole seasoning relies on recado (annatto paste), habanero peppers, and coconut.
