Bamar cuisine represents the culinary traditions of Myanmar's majority Burman ethnic group, forming the core of what is internationally recognized as Burmese food. Centered in the Irrawaddy River valley and the cities of Mandalay and Yangon, Bamar cooking features oil-rich curries simmered until the oil separates, signaling the dish is ready. Fermented fish paste (ngapi), turmeric, and onion form the flavor foundation. Signature dishes include mohinga (the national dish of fish noodle soup), hin (oil-based curries), a thoke (salads), and mont (rice-based snacks and noodles).
