Balinese cuisine stands apart from much of Indonesian cooking due to the island's Hindu cultural heritage, which permits pork and features elaborate ceremonial dishes. Rich spice pastes called base genep combine turmeric, galangal, shallots, garlic, chili, shrimp paste, and lesser galangal into complex flavor foundations. Cooking techniques include spit-roasting, wrapping in banana leaves for grilling, and slow-braising. Signature dishes include babi guling (spit-roast suckling pig), bebek betutu (slow-cooked spiced duck), lawar (minced meat salad), and sate lilit (minced seafood satay).
