



Asturian Recipes
Asturian cuisine from Spain's green northern coast is hearty mountain fare built on beans, dairy, cider, and pork. The region produces exceptional artisanal cheeses, including Cabrales blue cheese, and is famous for its sidrerías (cider houses). Signature dishes include fabada asturiana (bean stew with chorizo and morcilla), cachopo, and arroz con leche. The cool, wet climate produces a cuisine closer to Celtic traditions than Mediterranean ones.
