Eastern Armenian cuisine from the Republic of Armenia and historically Armenian areas of the Caucasus reflects a land of apricot orchards, mountain pastures, and Lake Sevan's freshwater fish. Khorovats (Armenian barbecue) is the centerpiece of gatherings, while dolma, ghapama (stuffed pumpkin), and spas (yogurt soup) are beloved home dishes. The cuisine is more dairy-forward than its western counterpart, with matsoni yogurt and various cheeses playing central roles.
