Amhara cuisine from Ethiopia's central highlands represents the culinary traditions most associated with Ethiopian cooking worldwide. The Amhara people developed the classic combination of injera with doro wot (spiced chicken stew with hard-boiled eggs), siga wot (beef stew), and an array of vegetable dishes for Orthodox fasting days.
