Altiplano Bolivian cuisine comes from the high Andean plateau around La Paz, Oruro, and Potosí, where extreme altitude shapes cooking traditions. Chuño (freeze-dried potatoes), quinoa, and tunta are ancient preserved staples. Plato paceño features fava beans, corn, cheese, and potatoes. Chairo (a dehydrated potato soup), fricasé (a pork and hominy stew eaten in the early morning), and api (a warm purple corn drink with cinnamon) sustain life at high elevation. Traditional Aymara markets drive the food culture.
