Afro-Trinidadian cuisine carries the culinary heritage of West African enslaved peoples, adapted over centuries to Caribbean ingredients and conditions. Callaloo (dasheen leaf stew with okra and coconut milk), pelau, oil down, and souse (pickled pig feet) are foundational dishes.
