Acehnese Recipes

Acehnese cuisine, from the northernmost tip of Sumatra, bears the strongest Indian and Middle Eastern influences in Indonesian cooking due to Aceh's historical role as a major Islamic trading port. Rich curries heavily spiced with cumin, coriander, cardamom, and fennel distinguish Acehnese food from other Sumatran styles. Goat and lamb are more prominent proteins than elsewhere in Indonesia. Signature dishes include mie Aceh (spicy stir-fried noodles), kari kambing (goat curry), ayam tangkap (herb-crusted fried chicken), and kuah pliek u (vegetable curry with fermented coconut).
