How to make Mangalorean Egg Stew

Preparing the Stew

  1. Step 1

    Place all ingredients except coconut milk in a pan and bring to a boil.

  2. Step 2

    Lower the heat and simmer for 5 minutes.

  3. Step 3

    Add the coconut milk and bring to a simmering point.

  4. Step 4

    Add the eggs and salt to taste, then remove from heat.

Seasoning and Garnishing

    Heat oil in a non-stick pan.

    Add curry leaves and then the sliced onion.

    Stir fry until the onions are dark brown.
