How to make Pumpkin Fritters

  1. Step 1

Cut and peel the pumpkin into pieces. Place the pieces in a pot, cover with water, and cook for 30 minutes or until tender.

  2. Step 2

Remove the pumpkin from the water, drain it, and mash it into a purée. Reserve the cooking water.

  3. Step 3

In 500 ml of the warm pumpkin cooking water, dissolve the yeast.

  4. Step 4

In a bowl, place half of the flour and add the yeast water, stirring until the ingredients are combined.

  5. Step 5

Add the pumpkin purée to the dough and mix, gradually adding the remaining flour and a splash of soda water or carbonated water until you achieve a thick dough. Knead the dough for five minutes.

  6. Step 6

Cover the dough with plastic wrap and let it rest for 30 minutes or until it doubles in size.

  7. Step 7

Take portions of the dough and fry the fritters in hot oil until they are cooked through and golden. You can shape them with a hole in the center or as medium-sized balls.

  8. Step 8

Remove the fritters and place them on paper towels to absorb excess oil.

Tips & Tricks

  1. Ensure the oil is hot enough before frying to prevent the fritters from absorbing too much oil.

  2. For a lighter texture, do not overmix the dough after adding the soda water.

  3. Sprinkle the sugar on the fritters while they are still warm so it adheres better.

FAQS

  1. Can I use canned pumpkin instead of fresh pumpkin?

Fresh pumpkin is recommended for the best texture and flavor, but canned pumpkin purée can be used as a substitute if fresh pumpkin is unavailable.

  2. What type of oil is best for frying the fritters?

Both olive oil and sunflower oil work well for frying. Olive oil will add a richer flavor, while sunflower oil has a more neutral taste.

  3. How do I know when the fritters are cooked through?

The fritters should be golden brown on the outside and fluffy on the inside. You can test one by cutting it open to ensure it is cooked through.

  4. Can I make the dough ahead of time?

It is best to prepare the dough fresh, but you can refrigerate it for a few hours if needed. Allow it to come to room temperature before frying.

  5. Can I add spices or flavorings to the dough?

Yes, you can add a pinch of cinnamon or nutmeg to the dough for additional flavor.
