How to make Machacado de Membrillo
- Step 1
Wash and peel the quinces. Cut them into pieces, remove the cores, and set the cores aside.

Place the quince pieces in a pot with 1 liter of water and cook until they are very tender. Remove from the cooking water and mash into a purée.

In a separate saucepan, place the quince cores, boil them for 10 minutes, then remove from heat, strain, and add this liquid to the quince purée, mixing well.

Transfer the entire mixture to a heavy-bottomed pot. Add an equal amount of sugar to the weight of the cooked quinces, along with the cinnamon stick.

Cook over low heat, stirring constantly with a wooden spoon, until the mixture thickens and starts to pull away from the bottom of the pot.

Remove from heat and let it cool slightly.

Remove the cinnamon stick and pour the mixture into a mold, preferably square or rectangular. Let it cool completely, then unmold.
