How to make Chipotles in Adobo Sauce

  1. Step 1

    Place the chipotle chilies in a saucepan with the water and brown sugar. Bring to a boil and let simmer for 5 minutes.

  2. Step 2

    In a separate saucepan, heat the olive oil and add the chopped onions, peeled garlic cloves, and the peeled carrots sliced into medium-thick rounds.

  3. Step 3

    Add the boiled chilies along with their cooking liquid to the vegetable mixture. Then, add the vinegar, salt, and oregano. Let everything cook over low heat for about 15 minutes.

  4. Step 4

    Remove from heat and transfer the mixture into sterilized, hot jars. Allow the preparation to cool completely before sealing the jars tightly to preserve the mixture for longer.
