How to make Chicken Crepes with Green Sauce

Crepe Batter

  1. Step 1

In a bowl, beat the egg and add the cornstarch. Mix well and gradually add the milk, whisking until you achieve a smooth, homogeneous mixture.

  2. Step 2

Prepare 8 large crepes, stirring the batter each time you pour a portion to ensure the mixture stays consistent.

Filling

  1. Step 1

Sauté the chopped onions in butter. Add the chicken, cut into very small cubes, and sauté for one minute.

  2. Step 2

Add the white wine and the chicken bouillon cube, previously dissolved in ¼ cup of water.

  3. Step 3

Cook over low heat for 10 minutes, then add the milk mixed with the cornstarch. Stir constantly until the mixture thickens. Season with salt and pepper to taste.

Green Sauce

  1. Step 1

Blend the steamed spinach together with the milk until smooth.

  2. Step 2

Pour the blended spinach into a saucepan and add the cornstarch dissolved in the fresh cream. Season with salt, pepper, and nutmeg. Cook until the sauce thickens.

Assembly

  1. Step 1

Place two tablespoons of filling in the center of each crepe and fold it into quarters.

  2. Step 2

Arrange the filled crepes in an ovenproof dish previously greased with butter. Broil in a hot oven for two minutes until lightly gratinated.

  3. Step 3

Remove from the oven and serve.
