How to make Charlomisú

  1. Step 1

    Beat the egg yolks with the sugar until they become very frothy.

  2. Step 2

    Mix the mascarpone cheese with the powdered sugar to form a cream, and add it by spoonfuls to the yolks, mixing gently.

  3. Step 3

    Hydrate the gelatin in five times its weight in water and dissolve it using a double boiler.

  4. Step 4

    Once the gelatin is lukewarm, add it to the mixture of yolks, sugar, and mascarpone, along with the fresh heavy cream whipped to soft peaks.

  5. Step 5

    Combine everything with gentle, folding motions. Refrigerate.

  6. Step 6

    In a bowl, mix the coffee with the amaretto and soak the ladyfinger cookies in it. Use them to line the bottom and sides of a 20-centimeter (8-inch) round springform pan.

  7. Step 7

    Pour the reserved mascarpone and yolk cream into the pan, stopping short of the top of the ladyfingers. Trim any cookies that stick out to create an even shape, and cover with the remaining ladyfingers.

  8. Step 8

    Refrigerate for at least 5 hours before unmolding.
