How to make Budín Diplomático

For the caramel

  1. Step 1

Combine the sugar and water in a pan and cook over low heat until it reaches the classic golden caramel stage.

  2. Step 2

Pour the caramel into a round mold (20–22 cm or 8–9 inches in diameter) and spread it evenly across the bottom and sides. Set aside.

For the pudding

  1. Step 1

Slice the bread and toast it in the oven.

  2. Step 2

Place the toasted bread in a bowl and add the melted butter, raisins, nuts, and cooked fruit cut into small cubes.

  3. Step 3

In a separate bowl, beat the eggs with the sugar, milk, vanilla extract, and cinnamon.

  4. Step 4

Pour the egg mixture over the bread and butter mixture, and stir until you achieve a thick paste.

  5. Step 5

Transfer the mixture into the caramel-coated mold.

Cooking

  1. Step 1

Bake the pudding in a water bath (bain-marie) in a preheated oven at 180°C (350°F) for approximately 50 minutes, or until a toothpick inserted in the center comes out clean.

Remove the pudding from the oven and the water bath, and allow it to cool before refrigerating for at least 3 hours.

  1. Step 1

Once chilled, unmold the Budín Diplomático.

  2. Step 2

Serve decorated with some fruits, and if desired, accompany it with a dollop of whipped cream.
