How to make Baked Stuffed Tomatoes

Prepare the Tomatoes

  1. Step 1

Cut off the top of each tomato and set the tops aside, as they will be used to cover the tomatoes later.

  2. Step 2

Scoop out the pulp from the tomatoes, leaving them hollow. Reserve the pulp for the filling.

Prepare the Filling

  1. Step 1

Heat a little oil in a skillet. Once hot, add the cooked ham, diced into very small cubes.

  2. Step 2

In a bowl, beat the eggs and mix them with the chopped parsley. Add this mixture to the skillet along with the mozzarella, cut into small pieces, and the reserved tomato pulp.

  3. Step 3

Season with salt and pepper, and stir the mixture with a wooden spoon. Cook for about one minute.

Stuff the Tomatoes

  1. Step 1

Fill the hollowed-out tomatoes with the prepared mixture.

  2. Step 2

Sprinkle grated Parmesan cheese over the top of the filling.

  3. Step 3

Cover each tomato with the top that was removed earlier.

Bake the Tomatoes

  1. Step 1

Preheat the oven to 180°C (350°F).

  2. Step 2

Place the stuffed tomatoes in the oven and bake for 15 minutes. Remove from the oven when done.
