A flavorful fried rice dish with beef liver and mixed vegetables.

Ingredients

(1 serving = 1 bowl)

Main Ingredients

  • 2cups
    cooked rice
  • 1/2cup
    chicken stock
  • 3tbsp
    oil for frying
  • 1cup
    onion diced
  • 1cup
    mixed vegetables (carrots, sweet peas, sweet corn, and green beans)
  • 1/2tsp
    thyme
  • 1tsp
    curry powder
  • 2
    scallions diced
  • 1piece
    chicken stock cube
  • 1cup
    beef liver cubed
  • 1/4tsp
    cayenne pepper
  • salt to taste

How to make Fried Rice with Beef Liver

Cooking the Rice

  1. Add the boiled rice to the chicken stock in a medium pot.

  2. Cook on medium heat until the liquid is absorbed.

Stir-frying

  1. Preheat the oil in a pan on medium to high heat.

  2. Add the onions and fry for a minute or two.

  3. Add the scallions, mixed vegetables, thyme, curry powder, salt, and chicken stock cube.

  4. Add the beef liver and rice.

  5. Stir-fry for about 3 to 5 minutes on high heat.

  6. Remove from heat and serve.

Tips & Tricks

  1. Ensure the beef liver is cooked through before serving.

  2. Adjust the cayenne pepper to your spice preference.
