How to make Steamed Thai Sago Peanut Dumplings with a Spicy Tamarind Dip
Prepare the Sago
Soak the sago pearls in water for about 30 minutes until they soften. Drain and set aside.
Make the Peanut Filling
Heat vegetable oil in a pan and sauté the garlic and shallot until fragrant.
Add the chopped peanuts, sesame seeds, coconut flakes, soy sauce, brown sugar, and white pepper.
Stir for 2-3 minutes until everything is well combined and the filling becomes slightly sticky. Remove from heat and let it cool.
Assemble the Dumplings
Take small portions of the soaked sago pearls and flatten them in your palm.
Place a spoonful of the peanut filling in the center and carefully fold the sago around it, sealing the filling inside.
Shape them into small, smooth dumplings.
Steam the Dumplings
Place the dumplings in a steamer lined with parchment paper or lightly greased.
Steam over medium heat for 10-12 minutes until the sago becomes translucent and sticky.
Prepare the Spicy Tamarind Dip
Combine tamarind paste, soy sauce, sugar, chili flakes, lime juice, and water in a small saucepan.
Bring the mixture to a boil, then reduce the heat and simmer for about 5 minutes until slightly thickened. Let it cool before serving.
Serve
Garnish the steamed dumplings with fresh coriander.
Serve them warm with the spicy tamarind dip on the side for a perfect balance of savory, nutty, and tangy flavors.
Tips & Tricks
Ensure the sago pearls are well soaked and softened before using them to avoid hard centers in the dumplings.
Adjust the chili flakes in the tamarind dip according to your spice preference.
