Ingredients
For the Cake Base
- 1cupall-purpose flour
- 1/2cupsugar
- 1/2cupunsalted butter (room temperature)
- 2piecelarge eggs
- 1tspvanilla extract
- 1/2tspbaking powder
- 1/4cupmilk
For the Glowing Jelly Layer
- 2cupstrawberry juice (strained, or from a strawberry juice box)
- 1tbspgelatin powder (or agar-agar for a vegetarian option)
- 1/4cupsugar (adjust for sweetness)
- 1dashedible glitter (optional for sparkle)
- 2drop pink food coloring (optional for a vibrant look)
For Decoration
- 1bundlefresh strawberries (whole or halved)
- 1dashedible glitter dust (for extra glow)
- 1cupwhipped cream (optional)
How to make Glowing Strawberry Jelly Cake
Make the Cake Base
Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
In a mixing bowl, cream the butter and sugar until light and fluffy.
Add the eggs, one at a time, beating well after each addition. Stir in the vanilla extract.
In another bowl, combine the flour and baking powder. Gradually add this dry mixture to the wet ingredients, alternating with the milk, until a smooth batter forms.
Pour the batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool completely before moving on to the jelly layer.
Prepare the Strawberry Jelly Layer
Combine the strawberry juice and sugar in a small pot. Heat gently over low heat until the sugar dissolves.
Sprinkle the gelatin powder over the mixture, stirring constantly until the gelatin dissolves completely (about 5-7 minutes). If using agar-agar, follow the package instructions to set the temperature to the right temperature.
Remove from heat and add a few drops of pink food coloring for a bright, strawberry-like glow. If you want the sparkling effect, mix in some edible glitter at this point.
Let the mixture cool to room temperature, but not so much that it begins to set.
Assemble the Cake
Place the cooled cake back in its cake pan or a springform pan to contain the jelly layer.
Pour the strawberry jelly mixture gently over the top of the cake. Smooth it out to form an even, glowing layer.
Refrigerate the cake for 3-4 hours, or until the jelly layer is fully set.
Decorate
Carefully remove the cake from the pan once the jelly is set.
Place fresh strawberries on top of the jelly layer for decoration.
Dust the cake lightly with edible glitter for an extra magical glow.
You can also pipe some whipped cream around the edges for added flair.
