A flavorful and nutritious mushroom curry with broad beans, perfect for a vegan meal.

- 1 1/2cupssliced mushrooms
- 1 1/2cupscooked broad beans
- 1piecemedium-sized onion, chopped
- 1piecemedium-sized tomato, chopped
- 1clovegarlic, chopped
- 2tbspcoconut powder
- 2tbspnutritional yeast
- 1tspginger powder
- 1tbspturmeric powder
- 1/2tspchopped pepper
- 2tbspcoconut oil
- 1sprigparsley
- 1pinchsalt
How to make Mushroom Curry Mix
Heat coconut oil over medium heat.
Add mushrooms and fry lightly.
Add chopped onions, garlic, and pepper. Stir to combine flavors.
Mix ginger powder, turmeric powder, coconut powder, and nutritional yeast in water. Stir into the mix.
Add broad beans and mix well.
Add tomatoes. Cover and allow flavors to simmer for 5 minutes over low heat.
Serve with steamed rice and vegetables.
Tips & Tricks
For a spicier curry, add bell pepper, more hot pepper, your favorite spice. or a pinch of chili powder.
