A delicious and colorful fried rice dish with a tropical twist of pineapple, seafood, and vegetables.

Ingredients

Seafood

  • 3piece
    Prawn

Vegetables

  • 10g
    Carrot
  • 10g
    Sweet corn
  • 15g
    Green peas
  • 20g
    Pineapple

Chilled

  • 2piece
    Eggs
  • 100g
    Ham
  • 100g
    Red sausage

Condiments

  • 1/2tsp
    Salt
  • 1tsp
    White sugar
  • 1tsp
    Seasoning sauce
  • 1/2tsp
    Chicken powder
  • 1/2tsp
    Yellow powder

Steamed Rice

  • 200g
    Rice

Side Dishes

  • 1/2piece
    Pineapple
  • 1/2
    Dried shredded pork

Oil for Frying

  • 2tbsp
    Chilli Oil

Method

Preparation

  1. Cook the steamed rice and let it cool down before using it for the fried rice.

  2. Beat the eggs and set aside.

  3. Cut the ham, red sausage, carrot, and pineapple into small pieces.

Cooking

  1. Heat the chilli oil in a pan.

  2. Add the prawns and stir-fry until cooked.

  3. Add the beaten eggs and scramble them.

  4. Add the ham, red sausage, carrot, sweet corn, green peas, and pineapple. Stir well.

  5. Add the steamed rice and mix everything together.

  6. Season with salt, white sugar, seasoning sauce, chicken powder, and yellow powder. Stir-fry until well combined.

  7. Serve the pineapple fried rice in a hollowed-out pineapple half and garnish with dried shredded pork.

Tips & Tricks

  1. For a spicier kick, add more chilli oil or chopped fresh chillies.

  2. You can customize this fried rice with your favorite vegetables or protein.

  3. Make sure all the ingredients are prepped and ready before starting to cook for a quick and easy process.
