- palm sugar

How to make Crispy Catfish
Remove the grilled catfish meat, remove the bones and skin, and pound until fine. Add a little vegetable oil to help the fish meat puff up. Pound until finely mixed. Let the pounded fish dry before frying.
Put vegetable oil in a pan and heat it over high heat. Gradually sprinkle the fish meat in and fry until it forms a raft. Fry until golden brown and crispy. Remove from the pan and drain the oil. Set aside.
Make the dressing by pounding the chili and garlic together. Season with fish sauce, lime juice, and palm sugar. Taste and adjust the taste as desired.
Arrange the crispy catfish meat on a plate, followed by the grated sour mango and shallots. Sprinkle with peanuts, sliced chili, and mint leaves. Serve with the prepared sauce.
