How to make Coconut Fried Rice
Cut the young coconut and extract the coconut water. Set aside the coconut meat.
In a pan, melt the butter over medium heat.
Add the shrimp and squid to the pan and cook until they are just done.
Add the sweet corn, peas, diced carrots, and raisins to the pan. Stir-fry for a few minutes.
Add the cooked rice and young coconut meat to the pan. Mix well.
Pour in the coconut milk and stir to combine.
Add the sugar, salt, and seasoning powder. Mix thoroughly.
Cook for a few more minutes until everything is well combined and heated through.
